     Beef barley soup

Ingredients
1/2 lb ground beef
1/2 cup diced onions
Fresh garlic several cloves minced
1/2 cup dried barley
7 cups water
1 can diced tomatoes undrained
1/2 cup diced celery
1/2 cup sliced fresh carrots
2 to 3 beef bouillon cubes
 
9 to 15 oz frozen mixed veggies
1 package frozen spinach
1/2 teaspoon basil
Garlic salt and pepper to taste

Instructions
Brown meat. Drain grease. Sauté onion and garlic. Add meat to onions and stir in remaining ingredients except for frozen veggies and spinach. Cover. Bring to boil. Reduce heat and simmer about an hour. Add frozen veggies and spinach and cook another 10 minutes or until veggies are tender. May add water if soup becomes too thick.
Enjoy!
Serving Suggestions
I put Parmesan cheese on top of my bowl and eat it with hot bread the first night. It's delicious with tortilla chips leftover
