     Egg Fried Rice

Ingredients
2 eggs, lightly beaten
oil to fry
1/2 onion, chopped finely
1 carrot, sliced
150g ham, chopped (optional)
1 C frozen peas
1 C frozen corn
3 T soya sauce (more/less to your taste)
2 T sweet chilli sauce (more/less to your taste)
 
4 C cooked rice

Instructions
Spray a non-stick pan with oil. Pour in the eggs, cook over a medium heat until set into a thin omelette. Roll up, remove, slice thinly and set aside.
Spray the non-stick pan again, add the onion and cook until tender. Add the carrot stir-fry until for a further 3 minutes.
Stir in the ham, rice, corn and peas and cook for another 3-4 minutes. Stir in the added sliced egg, soy sauce and sweet chilli sauce until combined.
Serving Suggestions
Can add in chicken to make your fav - chicken fried rice!!
