Preheat oven to 375. Place pie crust in deep dish pan and poke holes in crust. Prebake bottom of pie crust for 10 min. Remove from oven and cool on wire rack.

Peel and slice apples, place in bowl, squeeze lemon over them and add 1/4 cup sugar, toss to coat.

Melt 4 tbsps. butter in large dutch oven. Add apples, cover and cook on medium heat for 10 mins, stirring ever 2 minutes. Remove and strain juice in bowl. Add juice back to dutch oven. Add cinnamon to desired taste (about a tsp). Cook on high heat until juice/cinnamon is carmelized.

Add apples back into pot, toss to coat. Pour apple mixture into pie crust. Cover with top crust. Pinch edges and add slits to vent. Cook on 375 for 30 mins. Cool on wire rack.

Par cooking apples prevents watery pie. Pre-cooking bottom crust prevents soggy crust.
