     Five alarm chili

Ingredients
2 pounds ground beef (80-85% lean)
1 tsp salt
1/4 cup chipotle in adobo
2 oz ancho peppers (rehydrated)
28 oz can whole tomatoes
2 cups water
2 oz tortilla chips ( approx 2 cups)
4 tsp vegetable oil
2 lbs onions, chopped fine
 
2 jalapenos (seeded and minced)
6 cloves garlic, minced
2 Tbs ground cumin
2 TBS chile powder
1 tbs oregano
2 tsp ground coriander
2 tsp sugar
1 tsp cayenne
1 can beer (lager)

Instructions
Brown ground beef thoroughly. Rehydrate ancho chiles in 1 cup water (3 minutes in high microwave). Blend ancho, tomatoes, water, tortillas and chipotle. Set aside. Remove fully cooked ground beef and strain.
In same pot, add vegetable oil, onions and jalapenos. Cook 5 minutes until well softened. Add garlic, chile powder, cumin, oregano, sugar, coriander and cayenne. Cook for a few minutes to allow spices to bloom (approx 30 seconds). Add beer and chile sauce. Return beef to pot. Heat to a simmer and cook on low for 50-60 minutes.
NOTE- Homemade ground beef. Buy sirloin and cut into small half-inch cubes. Place in freezer for 30-40 minutes. Add beef to food processor for approximately 35 pulses per batch. (Optional)Add melted butter to beef after grinding.
