     Soup- Meatball

Ingredients
MEATBALLS
3/4 lb. lean ground beef
1/3 c. seasoned dry bread crumbs
1 egg, lightly beaten
2 T. grated Parmesan
2 T. parsley, finely chopped
1/4 tsp. pepper
SOUP
 
2 T. butter
1-2 onions, chopped
1 can (13 3/4 oz.) beef broth
1 c. water
1 can (35 oz.) chopped tomatoes (reserve liquid)
1 tsp. dried oregano
1/2 tsp. sugar
1 pkg. (10 oz.) frozen green beans, partially thawed
1/2 c. - 2 T. uncooked ditalini or tubetti pasta

Instructions
MEATBALLS- In medium bowl with fork combine ground beef, bread crumbs, egg, Parmesan, parsley and pepper. Shape into 1-inch meatballs. Set aside.
SOUP- In 3-quart saucepan, melt butter over medium. Add onions and cook 3 minutes. Stir in beef broth, water, tomatoes with liquid, oregano and sugar. Bring to a boil over high. Reduce heat to low and simmer 8 minutes.
Add green beans and simmer 3 minutes.
Stir in pasta, then carefully add meatballs, a few at a time. Simmer 12 minutes, stirring occasionally, until meatballs are fully cooked and pasta and veggies are tender. Serve with grated Parmesan cheese, if desired.
