Rinse and drain lentils.
In a deep saucepan, mix 3 c water, turmeric, and 1 T oil to a
boil over high heat. Add lentils. Cook uncovered 30 minutes,
stirring occasionally until lentils are soft. If water reduces too
much, add up to 1/2 c more. Remove from heat.
In a skilled, heat 1 1/2 T oil. Add cumin until it sizzles. Then,
add lentils, coconut milk, and salt, Allow it to come to a boil.
If too thick, add up to 1/2 c water.
Heat remaining 1/2 T oil in a small skillet. Add garlic, cayenne
or paprika, and then pour over lentils, sprinkle with cilantro,
and serve.
