     lentil chickpea chili

Ingredients
6 c vegetable broth
2 T tomato paste
1 T Dijon mustard
2 t ground cumin
1/2 t turmeric
1/4 t cayenne
1 t salt
16 oz red lentils
1 can 14.5 oz diced tomatoes
 
1 sweet onion, diced
1 carrot, diced
2 celery stalks, diced
3 garlic cloves, chopped
2 bay leaves
2 cans chickpeas, drained and rinsed
1/4 c chopped fresh cilantro

Instructions
Saute raw vegetables in oil for about 10 minutes. Add broth, tomato paste, tomatoes, garbanzos. Add lentils and spices. Bring to a boil, then simmer, covered, for 20 minutes, stirring occasionally.
