Place pears, lemon juice, sugar, salt, cardamom, giner, nutet,
cinnamon, and cloves in a large, heavy pot and bring to a
simmer over med-high heat, stirring frequently.
Lower the heat and continue to stir. The pears will begin to
break down after about 10 minutes, but you can help this along
with a masher or wooden spoon.
After an hour, remove the pot from the heat and blend the pear
mixture a bit at a time in a food processor. Return to the bot, if
necessary, and simmer over med heat for 20 minutes longer, or
until the butter mounds on a chilled spoons.
Ladle into hot jars, process for 10 minutes, seal.
