     Mint Chutney

Servings   1 1/4 cups

Ingredients
1/2 cup chopped onion
1 Tbsp olive oil
1/4 cup golden raisins, chopped
3 Tbsp white wine vinegar
1/4 cup water
1/4 tsp dried red pepper flakes
1/4 tsp ground corriander
1/4 tsp salt
1/2 cup fresh mint leaves, chopped
 

Instructions
Cook onion in oil, stir until pale golden. Stir in raisins, vinegar, water, red pepper flakes, corriander, and salt - simmer for 2 minutes. Transfer to a bowl and cool completely. Stir in the mint leaves just before serving.
