     Italian Shepards Pie

Ingredients
1 unbaked pie shell - approximately 9 inches
1 lb Italian sausage
1 cup cottage cheese
1 egg
1 1/2 cups warm mashed potatoes- without milk and butter added
1/4 cup sour cream
1/2 tsp dried oregeno
3/4 tsp salt
1/8 tsp pepper
 
2 tsp butter or margarine, melted
1 cup shredded cheddar
cherry tomatoes or sliced tomato

Instructions
Line unpricked pie shell with a double thickness of heavy-duty foil. Bake at 450 degrees for 7 minutes. Remove from oven, remove foil; set aside. Reduce heat to 350 degrees. In a skillet, cook the sausage until it's done through and drain well.
Place cottage chese and egg in a blender, cover and process until smooth. Transfer to a large bowl and stir in potatoes, sour cream, spices. Place sausage in pastry shell; top with potato mixture. Drizzle with butter. Bake for 55-60 minutes or until set.
Sprinkle with cheese and let stand for a few minutes so cheese can melt. Garnish with tomatoes.
