     Jalapeno Pepper Jelly

1 1/2 gallons jalapeno peppers
1/3 cup vinegar
1/4 cup water
3 cups sugar
1 box of Surejell

Wash and seed peppers (be sure to wear gloves). Process peppers in food processor – puree.
Pour puree into bowl. When all peppers pureed, put puree in cheese cloth a cup or two at a time and squeeze out as much juice as possible. Discard juice.
Put pepper “meat” in a pan – should get approximately 2 cups. Add vinegar, water and sugar.
Bring to boil and add 1 package of Suregell. Boil 1-2 minutes. Pour into small jars, 4 – 8 ounces. Put lids on immediately. Store in refrigerator.
