     Stuffed Pepper Soup

1 lb. ground beef
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 medium- size yellow onion, diced
3 cloves garlic, chopped
2 (14.5 oz.) cans diced tomatoes, drained
1 (15 oz.) can tomato sauce
2 cups beef broth
1 teaspoon Italian seasoning
Salt & black pepper
1 cup cooked rice

Brown & drain beef in a large stock-pot.
Reduce heat to medium. Add bell peppers, onion, & garlic. Cook for 5 minutes.
Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, & pepper. Bring to a boil, then reduce heat to low. Cover & simmer for 30 minutes.
Stir in rice before serving. This is even better the next day!
