In a bowl, toss your raw veggies in olive oil and season with spices. Place in a large baking sidh and roast in 425F oven for 20 mins, tossing halfway through.
Let cool. Add your roasted veggies to a can of rinsed black beans. add cilantro and squirt of lime juice. Combine gently.

Warm Tortillas in microwave for a few seconds and spray casserole dish with non stick spray.
evenly divide mixture to center of wrap and top with cheese. Fold in ends and roll, placing in dish seam side down.
Bake at 375F for 15 minutes or until golden brown. (tortilla will be crisp, for soft tortillas cover with foil)
