Cook potatoes 10-12 minutes until just tender, DON'T SALT.
Heat oil add bacon, cook until crisp.
Beat egg. Add remaining ingredients except spring onions. Mix well. Pour egg mixture over bacon. Cook on very low heat, stirring constantly until mixture thickens slightly.
Pour dressing over cooked, drained potatoes, sprinkle with spring onions.
