4 spinach tortillas
|
|
8 oz Spanish rice, cooked and warm
|
|
1 lb large shrimp
|
|
1 tbsp Italian seasoning
|
|
2 tbsp garlic, finely chopped
|
|
2 tbsp olive oil
|
|
1 cup roasted red peppers, sliced in thin strips
|
|
2 tbsp lemon juice
|
|
1/8 tsp salt
|
|
|

1/4 tsp black pepper
|
|
1/4 cup parsley
|

|
|
|
|

Instructions |

|
In large bowl add shrimp, Italian seasoning, garlic
and 1 tbsp olive oil.
|
|
|
Add remaining tbsp of olive oil to large skillet
over med-high heat. Add seasoned shrimp to skillet
and cook about 7-9 minutes.
|
|
|
Add roasted peppers to skillet and cook for another
minute. Remove from heat. Add lemon juice, salt,
pepper and parsley to skillet and stir.
|
|
|
Divide rice between 4 prepared bowls/tortillas and
top evenly with cooked shrimp.
