Mix dry ingredients in a mixing bowl. In a separate
bowl, beat together the wet ingredients except the
ricotta. Add the wet mixture and the ricotta to the
dry mixture. Combine.
Cook batter on a medium skillet using a 1/4 cup
measuring cup.
Variation-
Add the zest and juice of one lemon to the batter.

Suggestions
Serve warm with syrup. Lemon syrup is delicious with this dish.
