     Cranberry Pistachio bread

Ingredients
4 C self rising flour
2 C plus 2 tbl sugar, divided
2 C fresh or dried cranberries
1 C roasted salted pistacios, chopped
1 1/2 C hole milk
1/4 C melted butter
2 tsp vanilla extract
2 large eggs
 

Instructions
Preheat oven to 350. In bowl combine flour, 2 C sugar, add cranberries and pistachios, stir gently to combine...In a bowl stir together milk,butter,vanilla and eggs. Add milk mixture to flour mixture, stirring until just combined. Divide evenly among 8 mini loaf pans or 2 9x5 pans. Place on a baking sheet. Sprinkle tops with remaining 2 tbl sugar. Bake until a wooden pick comes out clean approx. 30 min for mini's and 50 for larger loaves. Let cool on wire racks
