     Tony He-Man Chili

Ingredients
1 pound hot sausage (Louisiana or Italian)
1 pound lean ground beef (chuck)
6 slices of bacon
1 large onion (chopped)
1 bell pepper (cut up)
2 cloves garlic (minced)
Tony Creole Seasoning to taste
1 Louisiana hot green pepper (or jalapeno) diced
1/4 cup Worcestershire sauce
 
1 cup Burgundy wine (any red works)
1 tsp dry mustard
1 tsp celery sees
1 tbsp chili powder
3 cups Italian pear tomatoes
1 (15 ounce) can pinto beans
1 (15 ounce) can kidney beans

Instructions
Brown bacon in large Dutch oven. Remove bacon, crumble and set aside. Slice sausage into one-inch pieces and fry in bacon fat until brown. Remove and set aside with bacon. Pour off excess fat and fry ground beef. Drain and set aside with other meat. Pour excess fat from pot. Cook onion, bell pepper, garlic and hot pepper over low heat 2 or 3 minutes. Stir in mustard, celery seeds, chili powder, simmer 10 minutes. Mash tomatoes, add with liquid and meats to onion mixture. Add Worcestershire sauce and wine. Heat to boiling. Reduce heat and simmer, season to taste with Tony’s Creole Seasoning; simmer for ˝ hour, stirring occasionally. Add beans with liquid, heat to boiling. Reduce heat and simmer for 1 hour, stirring occasionally.
