Beat eggs and sugar until fluffy with electric
mixer. Sift and mix dry ingredients and pour in
the egg mixture. Add oil and carrots. Pour batter
into muffin cups and bake in the oven at 175
degrees for 15-20 minutes, Allow to cool.
Whisk all the ingredients for the frosting with
electric mixer to a smooth cream. Spread or pipe
on the muffins.
