     Carrot Muffins w/Cheese frosting

3 large eggs 3 cups granulated sugar 3 cups flour 1 teaspoon vanilla 3 teaspoons baking powder 1 tsp ground cinnamon 1 teaspoon ground cardamom teaspoon ground ginger 1 pinch of salt 1 cup canola oil 4 cups shredded carrots Frosting 60 grams of soft butter 4 cups powdered sugar 1 teaspoon vanilla 100 grams of cream cheese
Beat eggs and sugar until fluffy with electric mixer. Sift and mix dry ingredients and pour in the egg mixture. Add oil and carrots. Pour batter into muffin cups and bake in the oven at 175 degrees for 15-20 minutes, Allow to cool. Whisk all the ingredients for the frosting with electric mixer to a smooth cream. Spread or pipe on the muffins.
