Cut the peppers lengthwise, also onions, garlic,
fennel, celery throw them in an oven dish ( or 2
), drizzle with olive oil and some salt.
Once they are nice and tender take them out, peel
the skin from the peppers then put them in a pan
on medium fire, add some veg stock ( around 2
cups), tomato polpa, chilli, sugar, spritz a
little balsamic, salt & pepper. Simmer it all
together for 5 min then put it in the food
processor... Add a little evoo.
