Pam spray and lightly flour 2 (9 inch) round cake pans. Combine flour, baking powder and salt. In a mixer bowl beat shortening on medium speed for about
30 seconds. Add sugar and vanilla and beat until fluffy. Add dry ingredients and milk alternately to each addition. Wash beaters. In a small mixer bowl, beat egg whites until stiff peaks form. Gently fold into flour mixture. Turn into prepared pans. Bake in a 375 degree oven about 20 minutes or until cake tests done. Cool
10 minutes on wire rack. Remove from pans and ice with Buttercream Icing.
