1T fresh squeezed lemon juice (about half large lemon)
1 tsp. lemon zest
1T olive oil
1/2 tsp. sea/kosher salt
1/4 tsp. ground peppercorns
2 oz. proscuitto, torn to bite size pieces
1 oz. chevre, crumbled
Instructions
Roll pizza dough to desired shape and thickness and place on parchment paper.
Preheat pizza stone to 500F in oven. While stone heats, in medium mixing bowl, combine arugula, lemon zest, lemon juice, olive oil, salt and pepper and toss to coat.
Transfer crust to heated pizza stone and spread with white sauce mixture, leaving 1-inch border around edge. Place crust in oven and cook for 8 minutes, or until dough is firm and sauce is bubbly and lightly golden.
Remove pizza from oven and transfer to serving plate. Add prosciutto and top with dressed arugula. Sprinkle with chevre crumbles. Slice to serve.
