Place all ingredients into a large mixing bowl and quickly mix
together well. Roll into a ball, wrap and rest in cling film for 20-30
mins.
Divide into 3 pieces and roll into a medium think sausage size.
Using a flat knife or side of fork, chop the dough into gnocchi sized
pieces, lightly flouring as you go so they do not stick together.
Place gnocchi, in batches, into boiling water. As they float to the
surface, remove and drain. Once drained, place into a medium heat
pan with a little olive oil to fry each side and give a crisp surface.
Once cooked, serve with your favourite pasta sauce. Will make 4
servings or 2 large servings.
