For Butter Milk Biscuits- mix together 1 1/2 cups cake flour, 3/4 cups all purpose flour, 2 tsp. baking powder, 1/2 teaspoon baking soda and 1 tsp. salt. Add 2 tbs. cold shortening cut into cubes and 1/2 cup cold unsalted butter cut into cubes also. pulse together in a food processor small crumbs are present. You can also do this by hand. Add 1 cup butter milk and pulse until a dough ball forms. Dust a dry work surface with flour and knead if needed add more flour. With floured hands gently press the dough out into an 11 by 8 inch rectangle about 1/2 inch thick. Dust lightly with flour and gently fold over in thirds like a letter. Roll or press out to a 6 by 6 inch and about 2 inches thick. Cut the dough into 9 circles about 2 inches by 2 inches. Place biscuits in the baking dish you're going to use, cover loosely with cling wrap and let them rest at room temperature until you prepare the filling
Filling- cook 4 cups cubed apples with the juice of one lemon, 1/3 cups sugar and 1/4 tsp. salt until tender for about 20 minutes. When cooked add 1 tsp. vanilla. Mix together 1/2 light brown sugar, 1 tbs. cinnamon, 1/8 tsp. nutmeg. dip biscuits in some melted butter and then into the cinnamon mixture. place in the baking dish with some space around them. they grow when baked. arrange apple mixture on top of the biscuits. Add 1/4 cup walnuts to the top, sprinkle the remaining cinnamon-sugar mixture on top. bake at 400 degrees pre heated oven. for about 30 minutes! Serve hot with a scoop of vanilla ice-cream . if you live in an area where you can buy butter milk biscuits use the pillsbury ones! Thats what i used!
