     Chicken Liver Pate

12 x small tubs chicken liver (approx 1kg)
3 blocks of butter
1 large onion
pancetta or smoked bacon x 8/9 rashers
2 cloves garlic
10 sheets leaf gelatine
4 measures brandy
4 measures port or sherry or maderia
salt & pepper
thyme / rosemary etc

soak gelatine in brandy & port & warm slightly
add all other ingredients to a large pan & cook for about 20 minutes
add gelatine & alcohol
blitz in blender & sieve into lined loaf tins chill until set

oatcakes & red onion marmalade
