     Italian Zucchini

Ingredients
1 zuchinni, thickly slied (12 oz)
1 summer squash, thickly slied (12 oz)
2 Tbsp olive oil
Salt and Black peper
Juice of 1/2 a lemon
Shredded parmesan
Red pepper flakes
 

Instructions
Preheat oven to 425. Toss first four ingredients. Arrange vegetables in an even layer on baking sheet; roast 20-25 minutes. Drizzle vegetables with lemon juice and transfer to s serving dish. Sprinkle vegetables with Parmesan, pepper flakes and salt; serve immediately.
