     Healthy Spinach and Ricotta Frittatas

Ingredients
170g frozen spinach, cooked & chopped
2 large eggs
300g Ricotta
6 Spring Onions, chopped
Handful of Rucola, chopped
Salt & Pepper
1tsp Ground Nutmeg - Extra for Sprinkling
 

Instructions
Pre-heat oven to 180°. Grease a muffin tin and line the muffin holes with baking paper (cut squares of baking paper and place them in the hole). Beak the eggs together until frothy, then beat in the ricotta. Add the spinach, rucola, onions, salt, pepper and nutmeg. Place around two tablespoons of the mixture in each hole. Bake for 20-30 minutes. Serve with additional nutmeg.
