In large heavy sauce pan saute onion in 2 tablespoons of oil
until translucent. Add garlic, celery, and peppers and saute
until tender. Add drained beans, bay leaf, cajun spice, 1/2 tsp smoked salt, and
diced sausage. Add about 1/2 cup of water.
Cover saucepan and simmer on low heat for 30 to 45 minutes, stirring occasionally,
adding more water as needed, to keep the consistency slightly thick. Adjust the
seasoning with smoked salt, black pepper, and cayenne pepper to taste.
