     Cajun Red Beans and Rice

Ingredients
1/2 pound cooked smoked sausage (I like Eckridge smoked turkey) cut lengthwise into 4ths and sliced
2 cans light red kidney beans
1 large chopped onion
3 cloves of garlic, minced or crushed
1/2 cup chopped celery
3/4 cup diced bell pepper
2 teaspoons cajun spice mix (recipe in cookbook)
1/2 to 1 teaspoon smoked salt.
Water as needed
 
1 bay leaf
Black pepper and cayenne pepper to taste
Vegetable or olive oil
6 cups cooked white or brown rice

Instructions
In large heavy sauce pan saute onion in 2 tablespoons of oil until translucent. Add garlic, celery, and peppers and saute until tender. Add drained beans, bay leaf, cajun spice, 1/2 tsp smoked salt, and diced sausage. Add about 1/2 cup of water. Cover saucepan and simmer on low heat for 30 to 45 minutes, stirring occasionally, adding more water as needed, to keep the consistency slightly thick. Adjust the seasoning with smoked salt, black pepper, and cayenne pepper to taste.
Serve over hot cooked rice.
