     Quinoa Apple Breakfast Bites

Ingredients
2 cups cooked quinoa
1 apple, peeled/chopped in to small pieces
3 eggs
1/4 cup real maple syrup
1/2 tsp cinnamon
 

Instructions
Preheat oven to 350 degrees. Spray mini muffin pan with cooking spray. Stir all ingredients in a mixing bowl.
Scoop mixture in to pan. Bake for 12-13 minutes, just until set.
