3 tbsp fresh lemon juice
|

1 tsp minced garlic

1 cup chopped zucchini

1 cup chopped summer squash

1 tbsp EVOO

1/4 cup pine nuts, toasted

Instructions |

|
Combine quinoa, lemon juice.
|

Coat skillet with EVOO. Add zucchini, squash and cook 4-6 minutes. Add to quinoa mixture and toss well. Top with pine nuts.
