1/2 pound of mild breakfast sausage, browned and crumbled (i like Jimmy Dean Turkey)
2 potatoes, peeled and cubed (red or yukon gold work well)
1/2 onion, diced
1 1/2 cup shredded cheddar cheese
3 large eggs
1 cup half and half or whole milk
1 large deep dish pie crust, uncooked (pet frozen deep dish crust works well)
1/4 teaspoon salt
Few grinds of black pepper
1to 2 tablespoons of flour
Instructions
Preheat oven to 350. Bring 3 inches of salted water to a boil.
Add potatoes and simmer until tender, 10 to 12 minutes. Drain.
Sauté onion in a little oil until translucent. Sprinkle flour over
cheddar cheese and mix until the cheese is dusted with flour.
Combine eggs, cream or milk, salt and pepper and beat lightly.
Layer cheese, potato, onion, and sausage in pie crust finishing
with a layer of cheese. Pour egg mix over the layers, filling the
crust. Place filled pie crust on a rimmed baking sheet and put
in oven. Bake at 350 until the center is set (a knife inserted in
the center comes out clean). Cool for 15 minutes before
serving.
For vegetarian version substitute sautéed mushrooms and bell
peppers for the sausage, adding a dash of cayenne pepper
and some herbs for seasoning. Cooked broccoli or spinach are
also good.
