Slice dates down center halfway through and open to create a pouch,
removing pits and hard stem ends.
In small mixing bowl, combine 2 oz. chevre, crème fraiche, and cream
cheese. Mix well to combine. Reserve 1/4 cup mixture and transfer to
small bowl and set aside. This will form mixture to coat outside of
dates.
To remaining mixture, add 1 oz. chevre, grated carrot, orange
blossom water/orange juice and salt. Mix well to combine. Transfer mixture to
fill a small piping bag with no tip. This will form filling for
dates.
In separate shallow bowl, combine chopped pecans, vanilla bean
sugar, orange zest, and minced rosemary and stir to equally
distribute.
To construct dates, fill each date with mixture from piping bag
and press sides of dates toward center to contain filling (ends of
date do not have to fully cover filling, just hold it in place).
Using large spoon, spoon reserved cream cheese/chevre/crème
fraiche mixture evenly over outside of each filled date, making
sure to coat well and over entire surface of date.
Roll dates in nut/sugar/zest/rosemary mixture to evenly cover and
place on tray covered in parchment paper. Refrigerate dates for
minimum of 30 min. but can be done ahead and covered for up to 24
hours.
