     LEMON POPPY SEED CAKE

Ingredients
1 pkg. lemon cake mix
4 eggs
1 pkg. (3-4 oz.) instant vanilla pudding mix
1 c. water
½ c. oil
¼ c. poppy seeds
Drizzle-
2 c. powdered sugar
2 Tbs. water
 
2 Tbs. lemon juice

Instructions
In a large bowl, combine the cake mix, pudding mix, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in poppy seeds. Transfer to a Pam sprayed 13 x 9 inch baking pan. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. For drizzle, combine powdered sugar, water and lemon juice; drizzle over cake. You can make this recipe as muffins by pouring batter into Pam sprayed muffin tins. Keep an eye on them since they bake quicker.
