     Sourdough Scones

Ingredients
Sourdough Starter
2 c warm water
2 c flour
Scones
1 c flour
1 tsp salt
1 T baking powder
1/2 tsp soda
 
1/4 c veg oil
1 c starter

Instructions
Sarter- Mix flour and water in glass or crockery container. coverwith a towel or cheesecloth and leave on counter top 3 or 4 days until bubbly and sour smelling. Stir once a day. refrigerate after 4 days. then it is ready to use. If you use 1/2 a cup of starter then add 1/2 c water and 1/2 cup flour to the original starter. Leave overnight on counter then cover not air tight and place back in the fridge.
Scones- combine flour salt baking powder baking soda oil and starter. turn out onto floured surface and knead till smooth. Roll out or pat into a circle about 1 inch thick. Cut into wedges. Place on ungreased baking sheet and bake at 425 for 10-12 min.
Can add a sprinkle of yeast to the starte when first getting it going but is not necessary. If starte changes colour ie. pink or orange discard and start again.
