     Stuffed Pasta Shells

Ingredients
1 container 500 gr cottage cheese or ricota I used ricotta
1 pkg frozen spinach thawed & well drained as in squeeze me
1/4 c grated parmesan
1 tsp Italian seasoning
20 jumbo shells cooked and drained reserving some of the cooking water
1 can pasta sauce
1 lg tomato chopped
1 c mozzarella cheese grated
I added 6 cloves garlic
 

Instructions
Heat oven to 400. Mix cottage cheese spinach 1/2 c mozzarella parmesan garlic and seasonings till well blended. Spoon 1 heaping t into each pasta shell.
Combine pasta sauce and tomatoes and some of the pasta water to thin the sauce a bit as the shells will suck up somw of the liquid. Place 1/2 the sauce in a 9x13 pan and place filled shells on top. Top shells and around shells w rest of sauce. Cover w tin foil.
Bake 25 min until heated through. Uncover and top w remaining mozza. Bake 2 min or until cheese is melted.
