     Christmas Pudding.(Mine)

Ingredients
1 1/4 c grated raw carrot
1 1/2 c grated apple
1 1/4 c flour
2 tsp baking powder
1 tsp salt
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 c butter
 
1 c brown sugar packed
1 c seedless rasins
1/4 grape or apple juice
1 tsp baking soda
1 c maraschino cherries sliced

Instructions
Grate carrot and apple and set aside. Reserve 1 T of the flour to dust the rasins. Sift remaining flour baking powder salt cloves nutmeg cinnamon together 3 times. Set aside. cream together butter and brown sugar. Beat well. Add dry ingredients alternating with juice. Blend well after each adddition. Add grated carrot and 1/2 of the apple and floured raisins. Dissolve baking soda in remaining apples. Mix in lightly? Pour into greased 1 1/2 quart mold. Cover tightly with foil and steam 4 1/2 - 5 hours.
Can be doubled or tripled. I put tinfoil under the lid for the casserole dish and either tie on with string or elastic to hold tightly then put on lid.
to steam I put a rack or jar lids into lg pan and place casserole on top. Water shoud come to bottom of casserole or a little higher.Cover pan. Bring to boil and reduce to a simmer. Will have to be checked often and add more boiling water as needed.
