      Black Bean and Zucchini Brownies

Ingredients
1 can (or 1 1/2 cups cooked) black beans
3-4 Tbsp oil
1 tsp vanilla
2 eggs
1 1/2 cups zucchini chunks
1/4 cup cocoa
3/4 cup flour of your choice
3/4 cup brown sugar
1/2 tsp baking soda
 
1/4 tsp salt
1/2 cup (or more!) mini chocolate chips

Instructions
In a blender, puree the black beans, oil, vanilla, eggs, and zucchini. Mix together dry ingredients in a separate bowl. Stir the wet ingredients into the dry ingredients. Pour into a 9x9 pan and bake at 350 degrees for 20-25 minutes. If a toothpick comes out clean, they're done! Cut 24 mini brownies.
