Ingredients
14 pieces Manicotti, cooked & drained
16 oz. Low-fat Cottage Cheese
2 oz. Grated Parmesan Cheese
8 oz. Shredded Part-Skim Mozzarella Cheese
1 Tbsp. Parsley, chopped
1/2 tsp. Salt
1/4 tsp. White Pepper
4 cups Spaghetti or Marinara Sauce
1 Pkg frozen Spinach, thawed
 
1-2 grated Zucchini
1-2 grated Carrots

Instructions
Cool pasta in a single layer on waxed paper. Combine all ingredients except sauce and spoon into manicotti. Spread sauce thinly in the bottom of a 13x9” baking pan. Arrange filled manicotti in a single layer in pan and cover with remaining sauce. Cover with foil and bake at 375 for 35 minutes or until hot and bubbly. (Makes 20 Stuffed Shells with the same recipe.
