     Thai Peanut-Coconut Milk Sauce

Ingredients
1 c salted, creamy peanut butter
juice of one lime
1/2 c coconut milk
1T coconut oil
1/8 c tamari
1/2 tsp. salt/to taste
1 - 2T agave syrup
2 tsp. ground ginger
2 tsp. Thai Green Curry seasoning
 
1/4 c hot water or to desired thickness

Instructions
Combine ingredients in food processor or blender (or in bowl and use immersion blender) and puree to fully incorporate, adding additional hot water if desired.
Serving Suggestions
Serve as dipping sauce for spring or egg rolls, saute into stir-fried veggies, serve over rice or rice noodles
