     CARROT CAKE

Ingredients
2 c. sugar
1 tsp. cinnamon
1 ½ c. oil
1 ½ tsp. baking soda
4 well-beaten eggs
1 tsp. salt
2 c. flour
1 c. chopped pecans
2 tsp. baking powder
 
3 c. peeled and grated carrots
Frosting-
32 oz. powdered sugar
16 oz. cream cheese, softened
1 stick butter

Instructions
Mix sugar and oil and add eggs. Add remaining ingredients and mix well. Pour into three greased and floured 9-inch cake pans. Bake about 30 minutes at 325 degrees. For icing cream together powdered sugar, cream cheese and butter. Spread on cooled cake.
