     Veggies- Honey-Roasted Root

Ingredients
2 c. coarsely chopped peeled sweet potato (about 1 large)
2 1/4 c. coarsely chopped parsnip (about 3)
2 1/4 c. coarsely chopped carrot (about 3)
1/4 c. tupelo honey
2 T. olive oil
1/2 tsp. salt
3 shallots, halved
Cooking spray
 

Instructions
Preheat oven to 450.
Combine all ingredients except cooking spray in large bowl; toss to coat.
Place veggie mixture on a jelly roll pan coated with spray.
Bake at 450 for 30 minutes or until veggies are tender and begin to brown, stirring every 15 minutes.
