     BBQ Ribs

Ingredients
1/2 c hoisin sauce
1/4 c plum sauce
1/2 c oyster sauce
1/4 c red wine vinegar
1/3 c honey
2 T soy sauce
2 T dry sherry
2 T sesame oil
1 T sambel olek
 
1 tsp 5 spice powder
1 T pepper
1 T grated orange rind
8 cloves finely minced garlic
1/4 c finely minced ginger
3 racks of back ribs

Instructions
Mix together all the above ingredients. Rub over theribs to coat evenly. Refrigerate for up to 4 hours.
Remove ribs from fridge 30 min prior to BBQing. Place ribs on a baking sheet and reserve marinade. Let meat come toi room temp.
Preheat grill to 300. Just before use brush grill with flovorless cooking oil. Place ribs meat side up. Close lid keeping temp at 300. Grill till meat starts to shrink away from the rib bones about 2 hours. After 2 hours start basting with sauce every 5 min for a total of 25 min.
I pre cook mine in the oven to save time. then cool or refrigerate and BBQ basting often till heated through.
