     Moroccan stew

Ingredients
2 tsp olive oil
1 c chopped onions
1/2 c diced celery
1/2 c diced green pepper
1 clove minced garlic
3 c veg broth
3 c cubed sweet potatoes
1 19 0z can tomatoes
1 19 oz can chick peas drained and rinsed
 
1 T lemon juice
2 tsp grated ginger
1 tsp each- cumin, curry powder, coriander, and chili powder
1/2 tsp salt
1/4 tsp pepper
1/4 c raisins
2 T peanut butter
2 t fresh chopped cilantro optional (I don't use it)

Instructions
HEAT OIL IN A LG NON STICK SAUCE PAN OVER MED HIGH HEAT ADD ONIONS CELERY GREEN PEPPER AND GARLIC. COOK AND STIR 3 MIN.
ADD ALL REMAINING INGREDIENTS EXCEPT RAISINS AND PEANUT BUTTER. bRING TO A BOIL AND REDUCE HEAT TO LOW AND SIMMER COVERED FOR 20 MIN.
STIR IN RAISINS AND PEANUT BUTTER. MIX WELL AND SIMMER FOR 5 MORE MIN. SERVE HOT
IS BEST IF MADE A COUPLE OF DAYS AHEAD.
