2 1/2 to 3 1/2 lb whole roaster chicken

1 lemon, cut into wedges

1 bay leaf

2-4 sprigs fresh thyme, or 3/4 teaspoon dried thyme

Instructions |
|
|
Remove giblets from chicken.
Put lemon wedges and bay leaf in cavity.
|
|
|
Place whole chicken in slow cooker. Scatter sprigs of thyme over the chicken. Sprinkle with salt and pepper.

cover and cook on low 5-7 hours, or until chicken is tender.
|
|
|
Serve hot with pasta or rice, or debone and freeze for your favorite casseroles or salads.
