     Falafal

Category   Entrees - Maindishes
Sub Category   None

Ingredients
a. 1 chopped onion
a. 1/2 cup chopped parsley
a. 4 cloves chopped garlic
b. 1 15 oz can chickpeas drained
c. 1 egg
c. 1 teaspoon baking powder
c. 2-3 teaspoons cumin
c. 1 teaspoon ground corriander
c. 1 teaspoon salt

c. pepper and cayenne pepper to taste
c. 1 teaspoon lemon juice
c. 1 teaspoon olive oil
c. upwards of 1/2 cup of plain bread crumbs
Oil for frying
D. 3/4 cup plain yogurt
D. 1.5 teaspoon dillweed
D. Salt and pepper to taste
D. 1/2 of a cucumber FINELY chopped

Instructions
Start out by making the D mixture. This is a sauce that goes on the falafel. Mix it together and let it refrigerate as long as possible.
Mix the A mixture together. If one is blessed enough to have a food processor, mix it until it is smooth. Otherwise, painstakingly chop the ingredients as fine as you can get them.
Mash/mortar and pestle the chickpeas. Add them to the A mixture and stir. Mix the C mixture in a separate bowl and add to the chickpea mixture.
Add the breadcrumbs. The mixture should be able to hold in a ball form, so more may be needed (but can make it taste bland if too much is used). The dough is better if it sits to let the flavors blend. Form them into about 10 patties. Fry in oil over medium high for about 2 minutes on each side.
Serving Suggestions
Serve inside pita bread with cucumber sauce and tomatoes!
