Preheat oven to 325 degrees. Combine the first 4 ingredients in a bowl.

Whisk together coconut oil, vanilla, and honey.
|
|
|
Pour the wet ingredients over the oat mixture and stir well to combine.
|
|
|
Line two 13 x 9 pyrex dishes with parchment paper. Divide mixture evenly between both dishes and press down with a potato masher. Bake @ 325 degrees for 35-40.
