     Crabless Crab Cakes

Ingredients
1/4 cup minced onion
1/4 cup minced green or red bell pepper
1 T olive oil plus more for frying
2 teaspoons Old Bay seasoning
2 1/2 cups corn kernels (thaw if frozen, but frozen corn works great)
1 15-oz. can hearts of palm, drained, sliced lengthwise and cut crosswise into ¾ inch slices
1/4 cup mayonnaise (use vegan mayo to make recipe vegan)
2 teaspoons dijon mustard
2 T chopped parsley
 
1/4 cup bread crumbs, plus more for coating
salt and pepper to taste

Instructions
Saute onion and bell pepper in oil til soft; add corn until crisp-tender.
Scrape 1 cup of mixture into food processor and pulse to a coarse puree. Add remainder of ingredients together; add bread crumbs til mixture holds together. Form patties and chill. When ready to cook, coat in breadcrumbs and add to skillet with oil. Cook until golden on each side
