Cut chicken into 1-inch cubes. Mix in the rice wine,egg white& 3
tsp cornstarch,adding cornstarch last. Marinate chicken for 15 min.
Mix together water,oj,soy sauce,brown sugar,chili paste,sesame oil
&2 tsp cornstarch. Add oil to skillet. When the oil is ready,add
ginger & garlic . stir fry briefly till aromatic
Add chicken & stirfry till chicken is nearly cooked through.
Give the sauce a quick stir. Push the chicken to the side & add
sauce, stirring to thicken. Mix sauce with chicken 7 cook for
another min.
