     black bean and quinoa chili

Ingredients
1 medium onion, chopped
2 T olive oil
3-4 cloves garlic, minced
2 15 oz cans black beans, drained and rinsed
1 sweet potato, peeled and cubed
1 large zucchini
3 1/2 c water
2 c vegetable broth
1 6 oz can tomato paste
 
2 t chili powder
1 1/2 t ground cumin
1 t dried oregano
1 c quinoa, rinsed and drained
plain greek yogurt
snipped cilantro

Instructions
Cook onions in oil until tender. add garlic, and cook for 2 minutes. Stir in beans, zucchini, Sweet potato, water, broth, tomato paste, and dry spices. Bring to a boil, simmer, reduce heat to simmer. Cover and cook for 5 minutes.
Stir in the quinoa. Return to boiling, reduce heat. Simmer uncovered for 20-25 minutes, or until quinoa and potatoes are tender. Season to taste with salt and pepper.
Serve topped with yogurt and cilantro.
