     Garlic Butter Spinach Pasta

Ingredients
11 oz. package fresh Spinach Fettucini or Linguini (may substitute dried pasta)
3 Tbsp. butter or Plugra
1 Tbsp. grapeseed or olive oil
3 medium cloves garlic, coarsely chopped
Shredded parmesan or asiago cheese (or any good Italian-style blend)
 

Instructions
Place butter, oil and garlic in a small saucepan. Bring to a simmer and cook about 10 minutes on medium-low, stirring occasionally. Meanwhile prepare water for pasta.
Fill a 2 qt saucepan with water. Salt liberally and bring to a boil. Add fresh pasta and cook about 6 minutes, until tender.
Drain pasta. Toss with butter/garlic mixture. For extra pizazz, reserve the garlic and brown lightly. Use as final garnish.
Sprinkle pasta generously with shredded cheese. Garnish with browned garlic, if applicable. Noodles can be cut in half before cooking to make them easier to eat. Chicken is a good addition to this recipe.
Serving Suggestions
Absolutely delicious with green salad and garlic bread. A hit with even finicky eaters.
